Se você vai tomar mais de um vinho à refeição, lembre-se de que o branco deve ser servido antes do tinto (que tem sabor mais forte).
A única exceção são os vinhos brancos adocicados, que devem ser servidos à sobremesa. Do mesmo modo, os vinhos mais jovens devem vir antes dos envelhecidos.
Nessa hierarquia, o melhor vinho fica sempre para o final da refeição, para que a boca conserve o melhor sabor. Para acompanhar a sobremesa, o vinho ideal é um champanhe demisec. Os champanhes secos só devem ser tomados como aperitivo ou muito depois das refeições.
Outra norma universalmente aceita é a que manda servir vinhos brancos para acompanhar carnes brancas (aves, peixes, crustáceos). Na verdade, o vinho branco pode acompanhar qualquer prato, até mesmo os de massas, tradicionalmente identificados pelos italianos com os vinhos tintos.
